Who Doesn’t Love Chocolate Chip Cookies???

_DSC0085 (2)This post should probably be about prayer, the first in a series of three, but I couldn’t stand it any longer!  I wanted to post a recipe!  I took all the pictures two nights ago to post a yummy new recipe I was trying and then noticed the “do not replicate” statement 🙁  I don’t want to get blacklisted in the blogging world before I even get started so you get the recipe for my favorite chocolate chip cookies from fastPaleo.  I have another recipe my husband likes better, but guess what?  He’s not writing this blog!  His favorite recipe DOES have less sugar so it’s blog post worthy, but I’ll save that for the next hurricane party.  (Yes, hurricane Ana is moving through, but we’re just seeing some rain at this point.  Oh!  Note to self…What Do Cavemen Eat During a Hurricane…idea for a blog post…I have to come up with some better options than the canned goods sitting in my spare room…blech!)

Anyhoo, I really wanted to share a recipe so I whipped up a batch of cookies, took a picture, downed a couple cookies, and here we are!  A few notes about the recipe:

  • Recipe calls for sifted almond flour.  I’ve learned a few things about almond flour on my paleo journey.  A lot of manufacturers use the words almond flour and almond meal interchangeably.  They are basically the same thing, but the finer the flour, the better your baked goods will be.  When I started eating paleo I lived in Korea and could only get Bob’s Red Mill Almond Meal in the commissary.  I used it and I thought it worked fine, until I moved to Hawaii and was able to order Honeyville.  Honeyville is much finer and works better for baking.  You can get it from Amazon.  My cookies and muffins seem to be a bit fluffier and lighter.  If you sift the flour, you’ll get even better results.  However, you need to have a hand crank sifter:  not the type where you squeeze the handle together.  Trust me, big mess and a broken sifter was the result of the squeeze handle sifter.  That being said…my hand crank sifter broke tonight!  I didn’t sift the flour and they still came out quite tasty.  Don’t NOT make the recipe just because you don’t have the right sifter or flour!  Honeyville flour?  Check!  Hand crank sifter?  Check!
  • Yes, room temperature items are better for baking.  The recipe calls for room temperature eggs and maple syrup; just do it.  I actually leave my eggs on the counter all the time…I know gasp!  I’ve been doing this for over a year and no one has died.  There are a lot of articles out in egg world debating this…just google it and you can decide.  Room temperature eggs and maple syrup?  Check!
  • Recipe calls for Enjoy Life Chocolate Chips.  Again, when I lived in Korea, I couldn’t get that brand so I just used dark chocolate chips.  Enjoy Life chocolate chips are a dairy free chip.  If you can tolerate dairy and are not doing strict paleo, then regular chocolate chips are fine.  Chocolate?  A commonly debated issue in paleo world because of course, chocolate contains dairy.  I eat it in moderation 🙂  I use Enjoy Life chips sometimes and they taste exactly the same as regular chocolate chips.  Chocolate?  Check!
  • Please do as the recipe says and flatten the cookies out after 5 minutes.  Sometimes paleo cookies do not flatten like regular cookies so they need a little help.  Flatten cookies?  Check!

I think that about covers it.  You will be pleasantly surprised how close these cookies are to the real thing.  I like them better because they stay moist days after baking, but they won’t last that long.  I know this is a lot of writing about a little ol’ cookie, but this is one of the reasons I wanted to start this blog.  I want my trials and errors to help you be successful in your paleo cooking!  Hope you enjoy and let me know if you try the recipe.  I think it’s time for one more cookie before bed 😉

Ever Tried to “Unthink” Something?

Since beginning my fitness journey over six years ago, family and friends have watched my successes, and failures, and the question I am most often asked is, “Where do I start?” I can’t tell you how many times I have excitedly responded to emails and messages with paragraphs upon paragraphs of websites to visit, recipes to try, fitness programs to follow, and tips I have learned throughout my journey.  Not once did I ever save those paragraphs and inevitably someone would email or message me a few days later with the same question!  Grrr… more writing!  A few months ago while pondering the “Where do I start?” question again, three words popped into my head: prayer, paleo and push ups.  I wasn’t trying to think of a name for a blog.  I didn’t even know I wanted to start a blog!  After repeating the words in my head a few times, I remember thinking that would be a cool name for a blog.  Wait, who said that?  Did I think that?  Was that my idea?  It had been “thought,” I couldn’t “unthink” it, UGH…big sigh…I felt a project being born.

I had been contemplating taking my life in a couple different directions and praying that the Lord would guide me.  I was thinking along the lines of massage therapy school or the Certified Strength and Conditioning Specialist certification, but in true “I’m the boss of you” fashion He had a totally different plan for me.  Don’t you just hate that?  (Sorry Emma; we’re not supposed to say hate in our house.)  I put the blog idea out there in facebook world, which I now have to laugh about. God:  You are going to start a blog called Prayer, Paleo, and Push ups.  Me:  Hmmm.  Sounds kinda interesting, let me ask my facebook friends and I’ll get back to ya’, okay?  God:  Seriously?

Has God ever told you something or given you an idea and that’s all you can think about? Well let me tell you, it stinks!  Especially when you don’t WANT to do it because you think you CAN’T do it.  He has so much faith in us, but we continue to have no faith in ourselves which really means we have no faith in Him.  Follow me?  Let me send out a little thank you to all my family and friends who pestered me, I mean continued to ask me, if I had started that blog yet over the last few months.  A couple of days after putting the blog idea on facebook I even had one friend tell me I needed to make t-shirts!  We CrossFitters love our tanks, don’t we Christy?

Where do you start? I wish someone would have told me where to start because it has taken me six years to figure out where to tell you where to start!  (Note to self…My Crazy Fitness Journey…idea for a blog post.)  It’s easy really: prayer, paleo, and push ups 🙂  I have no idea where this blog is going although today I thought a meal planning tab would be cool.  Really God?  You can stop now.  I want to share my faith by giving you a peek into my prayer life and studies; share my favorite paleo recipes and probably some really bad pictures of food unless my photography smitten daughter takes pity on me and decides to help; and share fitness programs, tips and ideas that have worked for me.  (Just because I LOVE CrossFit doesn’t mean that’s the only fitness program I believe in…and all the CrossFitters gasp!)  What else?  I have no idea!  All sarcasm aside, I am truly excited about all the wonderful, time consuming ideas God is giving me 🙂  Really, I am.  I pray that this blog is always Christ driven and He uses my hands as instruments for His work in this world.  I look forward to this journey and hope you will follow me as we pray, cook and move towards a Christ centered, healthier life!
